Caramelized onion & goat cheese flatbread




Weekends shout pizza to me. The warm gooey pie entices me often, but Mr lovetoeat seems to have lost an appetite for the same for long. In an attempt to work on both of our taste buds, i tried this healthy low fat semi-homemade version the last weekend. And the results with my humble pie were as satisfying as with the distant Ooey goOey relatives of the same!




Ingredients:
  • 2 whole wheat pita breads, store bought
  • 11/2 big spanish onion, thinly sliced
  • 6 tsp olive oil
  • 2 cloves on garlic, peeld and smashed
  • 1/2 tsp dried thymE
  • 3 tsp Low fat goat cheese
  • Salt and pepper to taste
  • Fresh mint leaves, chiffonaded
Preheat your oven to 375 F

Start by heating 4 tsp olive oil in a small pan , once well heated leave the smashed garlic in the oil. Keep on 'low heat' and let the oil get infused with the flavors of the garlic. Strain after 10-15 minutes or once the the garlic gets golden brown. Strain and keep this garlic oil aside. Simultaneously take a bigger pan and heat rest of the oil on medium high, leave the sliced onions and saute till the onions are caramelized. Should take 15-20 mins. Add thyme salt and pepper.Stir and switch off the flame.

To assemble, take the pita and brush it with the prepared garlic oil. Spread some caramelized onions on top and sprinkle 11/2 tsp of goat cheese all over. Repeat the same for the next pita . Lay them on a lined sheet pan and bake for 10 mins.

Serve hot with a garnish of mint leaves. Drizzle some more garlic oil on top if u like.
